Chef Meghna highlights the needs of modern day women. Chef Meghna is a banker turned baker, who after spending a decade in banking between Ahmedabad & Mumbai, one fine day, decided to give up all that corporate glamour and ventured into the culinary world. Someone who originally was never a good cook, but a combination of circumstances, personal choices & the rebel inside her, led her to the kitchen. An entrepreneur by nature and coming from business family, Meghna did not enjoy working under anyone, doing shifts & taking orders from seniors; she came to a tipping point that either she does something of her own or not do anything at all. A disciplined fitness lover, cleanliness freak & progressive thinker; Meghna's vision is to bring men to kitchen as she feels that. Lockdown Sandwich —————————- This sandwich has very little bread and lots of veggies. Very little mayonnaise and lots of hung curd. No butter or Oil and yet crunchy texture. This is my creation, sitting home for consecutive 6th day. The Lockdown Sandwich. Mexican Coins Recipe | Healthy Snack Recipe - Chef Meghna This one was for kids .. but after tasting it, I couldn’t stop eating it either. Ingredients : 2 tbs hung yoghurt 3 tsp tomato ketchup All vegetables approx. 1 spoon each : Finely chopped colourful bell peppers Finely chopped garlic Chopped boiled rajma Sweet corn Finely chopped carrot Finely chopped coriander Finely chopped spring onion/dry onion 1 tsp Mexican seasonings Chilli flakes Salt as per taste 8 bread slices Some shredded cheese(optional) Mexican seasonings(to sprinkle on top) Chill flakes(to sprinkle on top) Olive oil You can order above ingredients and get it delivered at your doorstep through below link : 🤍 Also checck my channel on : 🤍 Method : Take a bowl, add 2 tbs hung yoghurt/mayonnaise - optional (put curd in a muslin cloth and hang it overnight in the refrigerator to drain water) Add 3 tsp tomato ketchup, mix it well and make yoghurt base sauce. Further take another mixing bowl, and add all vegetables approx. 1 spoon each : Add finely chopped colourful bell peppers Add finely chopped garlic Add chopped boiled rajma Add sweet corn Add finely chopped carrot Add finely chopped coriander Add finely chopped spring/dry onion and mix it. (You can add vegetables as per your choice) Add 1 tsp Mexican seasonings Add some chilli flakes Add salt as per taste and mix it well. Further take around 8 bread slices, use cookie cutter to cut the bread into round shape. Take other bread slices, if u have smaller shape cookie cutter then remove the center part and make a ring from bread slice. Add salt in the yoghurt sauce and put it on round shape bread slice and place bread ring on it. Brush some olive oil on the rings and cook it on the pan for a minute. Now add a spoonful of yoghurt sauce in vegetable stuffing(for binding) and mix it well. Fill stuffing in each cavity of bread Add some shredded cheese(optional) Sprinkle some Mexican seasonings and some chilli flakes Now heat up the pan pour some oil and place bread coins on it. Cover the lid and cook it until it gets golden-brown brown colour. And then your Yummilicious, Kids Special Mexican Coins are ready.... Favourite starter for vegetarians whenever we go to restaurants, we order Hara Bhara Kabab.. the problem is that in restaurants they always fry Hara Bhara Kabab, but here I have altered the recipe and gone for shallow-frying. I strongly recommend this change; to avoid that extra oil. Love #ChefMeghna #HaraBharaKabab #VegKabab Ingredients: Blanched Spinach (Palak) - How to blanch Palak, you can see in Palak Paneer Recipe of mine 1 tsp Jeera (Cumin Seeds) 1 tsp Ginger Garlic Paste (adrak lasun ki paste) 1 chopped onion A cup of fresh green peas (matar) Some chopped french beans (faras beans) Salt Chopped green chillies 1/2 tsp Turmeric Powder Garam Masala Amchur powder Chopped capsicum Pudina ka patte (Mint Leaves) Coriander leaves (Dhaniya) Boiled potatoes Grated paneer 1 cup already dry roasted besan (chickpeas powder) bread crumbs Method: Heat up a pan Keep Blanched Palak ready, you can see in my other recipe video of Palak Paneer how Palak is blanched Add some oil into the pan Add 1 tsp Jeera (Cumin Seeds) Cook Jeera till it gets brown Add 1 tsp ginger garlic paste Add chopped onions Let it cook Add fresh green peas (hare matar) Add chopped French beans Add salt per taste Add chopped green chillies Mix well Add 1/2 tsp Turmeric powder Add Garam Masala Add Amchur powder Cook all vegetables till they are half cooked only because when we will make Tikki these will again get cooked; so don't make it too mushy. Best winter snack or breakfast - Methi ka Thepla - nutritious, and satisfying. Gujaratis carry these while travelling all around the world. Enjoy. Love M #ChefMeghna #MethiThepla #MethiKaThepla Ingredients: 1 cup Roti ka atta (Wheat Flour) 1/2 tsp Haldi (Turmeric Powder) A pinch of asafoetida (Hing powder)- optional 1 tsp red chilli powder A pinch of ajwain (carom seeds) Salt per taste 3/4th cup of methi washed, chopped and cleaned 1 spoon of Curd Water 1 spoon of oil Method: In a bowl, take 1 cup roti atta Add 1/2 tsp Haldi powder Add a pinch of asafoetida - this is optional Add 1 tsp red chilli powder Add a pinch of ajwain Add salt per taste Add half a cup of chopped methi Add a spoon of curd and mix with hands Add little water as you bind atta Add a spoon of oil while mixing As atta starts leaving bowl and makes round bound form, it means atta is ready #FoodTip : Methi or Palak atta shouldn't be left for more than 5 minutes as methi tends to lose water and will make atta very soft Now make small roundels Use a roller pin and roll them, thepla should be thicker than chapati but not as thick as paratha Heat up a tawa and cook on both sides, once you see it's half cooked, apply 1 tsp oil on both sides Thepla will be ready in another 3-4 minutes. Love M #ChefMeghna #DalFry #DalTadka Ingredients: 1 Cup Yellow Dal (Arhar / Toor ) 1 tsp Turmeric Powder (Haldi) 1 small finely chopped onion 1 chopped tomato (optional) Water Salt as per taste 1/2 tbs Ghee 1/2 tsp Asafoetida (Hing powder) 1/2 tsp Cumin Seeds (Jeera) 2 cloves of Garlic finely chopped 1 tsp Kashmiri Red Chili Powder 1 fresh Green Chili finely chopped 2 dry Red Chillies 1/2 tsp Garam Masala Coriander leaves for garnishing Method: Take soaked yellow (Toor / Arhar) dal Add 1 tsp Turmeric Powder (Haldi) Add 1 small finely chopped onion Adding Tomato is optional Add 1/2 cup water Add salt per taste We are making a lighter version so we will do tempering (tadka) just once Restaurants usually do 2-3 times tempering (tadka) & make it very heavy Close the lid on the pressure cooker and wait for 2-3 whistles Let the cooker cool down Open the lid and keep the heat on Keep dal little chunky - not too mushy Just add 1/4th cup water Keep cooker aside and let it boil Time to prepare the Tadka (Tempering) Take 1/2 tbs Ghee Add 1/2 tsp Asafoetida Add 1/2 tsp Cumin Seeds Add 2 cloves of Garlic Let it brown a little Add 1 Green Chili finely chopped Add 2 Dry Red Chilies Add 1 tsp Kashmiri Red Chili Powder for Color Add 1/2 tsp Garam Masala Mix well Tadka is now ready In a serving bowl take the boiled dal that we have prepared Sprinkle Tadka over boiled dal Garnish with coriander leave Enjoy Dal Fry or Dal Tadka restaurant-style in a healthier version at home. Because it’s quick & an excellent source of Protein and replacing eggs completely with this vegetarian version of Omelet Sandwich or you can even call it Vegetarian French Toasts. And of course the twist is the pudina mint chutney inside; takes this a whole new level. Enjoy. Ingredients 3/4th cup Besan (Chickpeas flour) 1/2 tsp Haldi Powder (Turmeric powder) A pinch of Hing (Asafoetida) 1 cup Khatta Dahin (Sour curd) 1.5 cup of water Salt 1 tbs oil 1 tsp rai ke daane (Mustard Seeds) A pinch of asafoetida (Hing Powder) Green chillies sliced Green curry leaves Fresh coconut Coriander leaves You can order above ingredients and get it delivered at your doorstep through below link : 🤍 Also checck my channel on : 🤍 Method: Take 3/4th cup besan add 1/2 tsp Haldi Powder (Turmeric powder) A pinch of Hing (Asafoetida) We are making Jain version, so not adding ginger Add 1 cup sour curd Mix well Add 1.5 cup water gradually Mix well Add salt per taste Time to cook the batter Heat up the pan at medium flame Pour batter into the pan Keep stirring else it will stick to the bottom or develop lumps Keep cooking & stirring for 10 minutes till batter gets thickened How to check that the batter is ready? Love M #ChefMeghna #MungDalChilla #HealthyMeals 00:00 - Making the Batter 00:37 - Churning Dal 01:03 - Making Chilla 01:15 - Preparing the Stuffing 01:41 - Flipping the Chilla 01:58 - Meghna's Magic 02:12 - Adding Paneer Stuffing 02:30 - Plating Ingredients: 2 drops of oil 1 cup Chilka waali mung dal soaked in water for 2-3 hours & crushed in a mixer with water to make a batter (Split green mung dal) 1 tsp ginger garlic paste Salt per taste 4 chopped green chillies For stuffing: 150 gm grated paneer 2 spoons of finely chopped bell peppers (Shimla Mirch) 2 spoons of finely chopped onion some chopped coriander Imli chutney OR Coriander chutney (whichever you like) Method: In a flat pan, pour 2 drops of oil, warm up the pan on slow flame Take 1 cup split green mung dal, soak in water for 2-3 hours before cooking and crush it in a mixie with some water to make batter consistency Add 1 tsp ginger garlic paste Add some salt per taste Mix well Add 2 chopped green chillies to the batter; leave the rest for stuffing Mix everything Time to make mung dal chilla. Take some batter and pour in the centre of the pan and spread it around just like we do for dosa Let it cook on a slow flame While chilla is getting cooked, let's prepare the paneer stuffing in a bowl, take 150 gm grated paneer and add 2 spoons of colourful finely chopped bell peppers Add 2 spoons of finely chopped onions and remaining finely chopped green chillies and corriander Mix this colourful paneer stuffing Meanwhile, chilla is getting cooked, flip it on the pan so that it gets cooked from both sides equally Now apply some Imly ki chutney on one side of the chilla and fill stuffing in the middle. Roll it over Chilla is ready. Garnish with coriander and serve hot or even giving this in tiffin is a wonderful idea. I eat this all the time as it's got just 2 drops of oil. Learn to make Veg Frankie with Cheese & Paneer in a few easy steps. It's just yum yum yum...💋💋💋Love M. #ChefMeghna #BeginnersRecipe #StreetFood #Frankie Aloo Veg Franky / Kathi Roll / Veg Wraps / Veg Rolls Ingredients: Any Oil 1 Onion cut in slices 1/2 Onion finely chopped 1/2 Capsicum cut in slices 1/2 tsp chaat masala (or Salt) 1/2 tsp cumin seeds (jeera) 4 Garlic cloves - finely chopped or crushed Salt to taste 1 Green chilli finely chopped 1 tsp Garam Masala 100 gm Boiled & Mashed Aloo (Potato) 100 gm Paneer (Shredded) - Optional 2 tbs Coriander Leave Maida Roti (Or Tortillas) Green Chutney & Mayonnaise mixed Cheese Methodology: Take a Pan & add 1/2 tsp Oil will do. Add 1 Onion & 1/2 Capsicum slices to saute, till they become soft. Add 1/2 tsp Chaat Masala (or salt). Mix it well. Now take the sauce onion & capsicum out of the pan & keep aside. To prepare stuffing : Again the take the same pan & add 1 tbs oil. Heat it up a little. & add 1/2 tsp Cumin Seeds (Jeera) Add crushed garlic. Add 1/2 onion finely chopped Add salt to taste. Add green chilli finely chopped Mix it well. Add Garam Masala Add mashed potato. Keep mixing it for 2 minutes more. Add Shredded Paneer - This is optional. Mix it. Add coriander leaves. Now let it cool down for 2 minutes. Take the stuffing out into a bowl. Keep the Maida Roti ready with oil applied on both sides to keep it soft. Spread Green Chutney & Mayonnaise mix on the Roti. Make a cylinder shape of stuffing & keep it on Roti. Spread the saute Onion & Capsicum on the stuffing & Roti. Shred some cheese on top. Fold Roti overlapping stuffing. & put it back on pan to grill on both the sides. Shift the franky on a platter. Wrap franky into aluminium foil covering the half. Franky is ready, serve it with green salad. Happy Cooking! #DalMakhanirecipehindi #दालमखनी #MeghnaFoodMagic Ingredients: Soak 3/4th cup Urad Dal 1/4th cup Rajma all night in hot water 2 tsp ghee 1 tsp cumin seeds (Jeera) 4-5 garlic cloves finely chopped 1 big of ginger finely chopped Alternative : garlic ginger paste 2 green chillies check Rajma if cooked properly or not 1 big onion finely chopped Salt 1.5 tsp garam masala 1.5 tsp dhaniya powder (corriander seeds powder) 1.5 tsp red chilli powder 1 cup tomato puree (made from 3 tomatoes) Water 2 tbs Milk powder Continuously stir dal as urad dal gets stuck on the bottom of pan fenugreek leaves Beaten curd 1/4 tsp of butter to ga ginger julians coriander leaves Method: Soak 3/4th cup Urad Dal and 1/4th cup Rajma all night in hot water Cook in cooker till you get one boil Remove the dark color water This will ensure dal makhani is reddish and not black Add water into urad dal and rajma Add some salt Cook in cooker for 5-7 whistles In a pan take 2 tsp ghee For serving of 4-5 people, 2 tsp ghee is healthy Add 1 tsp cumin seeds (Jeera) When you hear crackling sound of cumin seeds add 4-5 garlic cloves finely chopped add 1 big of ginger finely chopped Can use garlic ginger paste as well add 2 green chillies Meanwhile open the cooker and check if Rajma is cooked properly or not Once ginger garlic are golden brown, add 1 big onion finely chopped Add salt so that onion gets cooked Once onions get golden brown, add 1.5 tsp garam masala add 1.5 tsp dhaniya powder (corriander seeds powder) Add 1.5 tsp red chilli powder Add 1 cup tomato puree Mix well Tomato puree made by taking 3 tomatoes Indian food tastes better by cooking masalas nicely Add little water in the pan so that maslas and tomatoes don’t get burnt We will not be using cream and very little butter at the last Take a cup of milk powder mixed in water Add into masalas Milk powder ensures gravy gets thick and stays fine Now add boiled dal and rajma If you follow all the tips, dal makhani color will get the red color Boil nicely on medium flame for 10-12 min till it gets thick Continuously stir dal as urad dal gets stuck on the bottom of pan After 10-12 min boiling, add fenugreek leaves Add ginger Julians Let it cook for 5 min more You will see dal getting really creamy Take curd from outside which is not sour and little smooth after beating Turn off heat Pour beaten curd fon top (instead of cream) This way it is healthier Serve dal and garnish with beaten curd Just a 1/4 tsp of butter to garnish and some ginger Julians And finally coriander leaves on top 00:00 - Making Dal Makhani 00:09 - How to Boil Rajma and Dal 01:44 - Preparing to make Dal Makhani 03:30 - Adding Onion 03:58 - Adding Dry Spices 04:29 - Adding Tomato Puree 04:47 - Meghna's Tip 05:32 - Meghna's Trick 06:13 - Adding Boiled Dal and Rajma 08:28 - Meghna's Healthy Twist 09:44 - Plating 10:37 - Meghna Tastes the Dal Makhani . Some of you write to me about reducing sugar levels in desserts for kids. This is my version of a no-bake dessert which is low in sweetness and is in-between the Swiss cake and Charlotte cake, especially for people who don’t have time . Enjoy this 3 Ingredients dessert - Chocolate Rolls with Nutella & Bread- and surprise your loved ones this holiday season. Love M #ChefMeghna #ChocolateNutellaRollCake #NoBakeDessert Ingredients: 3 white bread slices Chocolate Hazelnut Spread Whipped Cream (alternatively you may use Chocolate Mousse) Method: Take regular 3 white breads & cut out the edges. Take cling film and Line the bread slices on it in a sequence such that borders overlap. Apply a bit of water with wet hands to stick the borders. Press the connecting edges to flatten them. Use Roller pin to flatten the bread. Apply Chocolate Hazelnut Spread on the bread roll. And roll them up inside the cling flim. Keep them in refrigerator for 10 minutes Take out the rolls and cut them into thin slices. They will look like Swiss Roll Cake. Take a bowl covered with cling film from inside. Now place all the bread roll slices in the bowl such that it covers the surface leaving cavity inside. Now layer with whipped cream and bread roll slices inside the cavity. The last layer has to be bread roll slices. Cover it with cling film and keep inside refrigerator for an hour. Take out, de-mould and serve. Love M #ChefMeghna #PaneerChili #ChiliPaneer 00:00 - Making of Chilli Paneer 00:43 - Cooking onions and capsicum 01:21 - Adding soya sauce 01:50 - Paneer saute 02:17 - Cornflour slurry 02:41 - Plating time Ingredients: 1 tbs Oil 2 cloves finely chopped garlic 4 finely chopped chilies 1 Onion cut in cubes 1 Capsicum cut in cubes Salt per taste Green onion - Keep whites and greens chopped separately 2 tsp soya sauce 1.1/2 tsp chili sauce 1 tsp vinegar 1 spoon tomato ketchup 200 gm Paneer (Cottage Cheese) - saute done on a pan to get the brown color coating 2-3 spoons of Corn flour slurry - Mix corn flour in water and keep ready Method : Heat up the pan Add 1 tbs oil Add finely chopped chilies and garlic Cook till garlic gets mild or golden brown color Add onion and capsicum cubes Cook for 2 minutes till they get tender Don't overcook, we want crunch while eating Chili Paneer Add little salt Add some green onion whites Add 2 tsp soya sauce Add 1.5 tsp chili sauce Add 1 tsp vinegar Add 1 spoon of tomato ketchup Mix well Add Paneer I have already saute paneer on a pan before and kept ready. I have been making this recipe for years & my daughter just loves it. 💋💋💋 Love M. #ChefMeghna #PalakPaneer #IndianFood #NorthIndianFood #Recipe Ingredients: 200 gm Spinach (Palak) 100 gm Coriander leaves 1/2 Lemon 2 Green chillies 2 Spoon Oil 1/2 tsp Jeera (Cumin Seeds) 3-4 cloves Garlic 1 Large Onion Puree Salt as per taste 1 tsp Garam Masala (optional) 100 gm Paneer - cut in cubes 2 spoon Cooking Cream Method Take 200 gm Fresh Palak leaves Blanch Palak leaves by first placing it in Boiling Water for 5-6 seconds And then shifting this Palak leaves into a bowl of ice-cold water. #MeghnasMagicTip : This will stop the cooking process. Once Palak leaves cool down squeeze the water out & place the leaves in a mixer grinder. Avoid taking water into mixie. Add Coriander leaves in the mixer for churning. #MeghnasMagicTip : Add 1/2 Lemon water to ensure leaves don't turn black Add 2 green chilies. You may add less or more chillies depending upon your taste. Churn the mixer till you get puree. Heat the pan at medium flame. Add 2 spoon oil in the pan. Add 1/2 tsp Jeera (Cumin Seeds) Add finely chopped 3-4 cloves of garlic Let it get little brown. Add 1 Onion Puree (Puree to be made from 1 Onion) Add salt per taste Let it cook for till Onions get brown. Add 1 tsp Garam Masala (Optional) Now add the Palak Puree we had prepared earlier Add 2 tbs water. Cover the pan with a lid Let it cook for 5 minutes. Add 100 gm Paneer (cut in cubes) Mix it well. Cook it for 2 minutes. Add 1 spoon of cooking cream, will give richness to the gravy. Palak Paneer is ready. Serve it in a serving bowl. Topple with 1 spoon of cooking cream and some shredded Paneer. Ingredient: 1 Cup Maida or Plain Flour (take out 1 tbs maida) 2 tbsp cocoa powder 1 tsp baking powder 1/2 tsp baking soda 1/4th cup odourless oil (80 gm butter) 1/2 cup castor sugar (normal sugar churned in mixie) 1/2 tsp coffee powder +1 spoon milk 1/2 cup milk a pinch of salt Place butter paper in the pan Grease the pan Salt layer in the cooking pan for equal hit Cover pan lid with clothing to avoid water dripping in cake In oven 10 min preheat 20-25 min baking, 180-degree temp on the middle rack On gas flame, 10 min preheat, slow flame, 35-40 minutes baking 150 gm dark chocolate melted Add 1/2 tsp milk in melted chocolate so the chocolate doesn’t get set 1 cup Whipped cream Chocolate shave The chocolate melted on bubble wraps and set for decorating the cake Method: Take 1 cup Maida and remove 1 tbs maida out of it Add 2 tbsp cocoa powder Add 1 tsp baking powder Add 1/2 tsp baking soda Sieve it properly so no lumps are left In another bowl, take 1/4th cup oil, you can alternatively take 80 gm butter Add 1/2 cup caster sugar Mix well take 1/2 tsp coffee powder diluted in 1 spoon milk and add Coffee compliments nicely take 1/2 cup milk, add it partially now and leave some for later now churn mix for 5 minutes if whisking else with beater u can beat for 2 minutes Now mix dry ingredient in wet ingredients keep mixing milk and keep mixing the mixture be gentle while mixing In a 6 inch tin, grease with oil and butter paper Add a pinch of salt in cake batter as it will enhance the flavour Salt layer in the cooking pan for equal hit Cover pan lid with clothing to avoid water dripping in cake In oven 10 min preheat 20-25 min baking, 180-degree temp on the middle rack On gas flame, 10 min preheat, slow flame, 35-40 minutes baking take out the cake and let it cool down To prepare icing, melt 150-gram chocolate Add 1/2 tsp milk in melted chocolate so the chocolate doesn’t get set Beat 1 cup whipping cream till you get a soft peak Add whipped cream into the chocolate Mix and place it in the fridge for 15 minutes Clear the edges, demould cake And apply chocolate icing on and around the cake. Love M #GujiyaRecipe #Ghughra #ChefMeghna Ingredients: 1 cup khoya (mava) 1.5 cup Maida (plain flour) 2 spoon Ghee Water Dry fruits - Almond, Pista 1.5 tbs Sugar Elaichi powder Honey 2 spoon coconut powder Method: Take 1 cup mava (khoya) in a pan Keep roasting it till mava gets brown Make sure you keep stirring mava so that it doesn't get stick to the pan On the sides take a bowl and add 1 cup Maida (plain flour) In the Maida, add 2 spoon ghee Keep mixing everything Keep checking mava Add little cold water 2-2 spoon in the maida and ghee mixture Make dough like Paratha Cover the bowl of lead and leave it for resting 15-20 minutes On the pan, mava has been roasted well and its color has changed take out mava in a bowl and let it cool down Once mava gets cool down, add 2 spoon coconut powder Add some elaichi powder Add chopped pista & almonds Add 1.5 tbs sugar Mix well. Gujiya filling is ready Now take the maida dough and flatten it like a chapati Cut out roundels using a bowl Take some mava gujiya filling and place it at the centre of roundels Apply a little water on the sides of roundels Close the gujiya and using fork seal the sides. We are baking and not frying. So take parchment paper on a baking tray Pre-heat oven for 10 minutes at 180 degree Place gujiya in it and bake at 180 degrees for 20 minutes Take it out - the colour won't be too brown as we are baking and not frying Immediately brush honey on the top; you will get the excellent shine Garnish with chopped almonds and pista While serving in a plate; pour some more honey on the top. No Oven Eggless Chocolate Marble Tea-Time Cake On popular demand, sharing this easy tea time chocolate marble cake. You can order all recipe ingredients from here for home delivery : 🤍 Ingredients : 200 grm condensed milk 1/4th cup oil 1 tsp vanilla essence 1 cup all purpose flour(maida) 1 tsp baking powder 1/2 tsp baking soda Pinch of salt 1/2 cup milk 1 tbs cocoa powder Method : Take a mixing bowl and pour 200 grm condensed milk. Add 1/4th cup oil Add 1 tsp vanilla essence and mix all these wet ingredients well. Now take another mixing bowl, put a food strainer in it. Add 1 cup all purpose flour(maida) Add 1 tsp baking powder Add 1/2 tsp baking soda(should be half of the measure of baking powder) Add a pinch of salt, strain all these dry ingredients and mix it. Now add the mixture of wet ingredients in it and keep mixing. Add 1/2 cup milk(should be of room temperature) mix it well and bring the batter to pouring consistency. Take out half batter in other bowl and add 1tbs cocoa powder(add more for bitterness) in the batter and mix it. Take a baking mould(round/square/rectangular) of around 6 inch. Grease some oil in the mould and place parchment paper in it. Pour both the batters one by one, starting with vanilla batter.(each 2 tbs) Take a small stick n mix the batter lightly.(don't stir firmly) Cover 3/4th of the mould with batter(cake requires some space in the mould to rise). Make a layer of salt in the pan, put a stand and pre heat it. Then place cake mould on the stand and cover the steamer lid with cloth(prevents water running into the cake) Cook it for 35-40 mins on slow flame(check after 35 mins, if the batter sticks to hand then leave for another 5 mins to cook it nicely). Now take the cake mould out of the pan and rest it for 15 mins. Release the sides of cake gently with the help of knife and take it on a serving plate, cut it into pieces. And then enjoy your best tea time snack Marble Cake, serving it with a hot coffee will make your day delightedl!!! . Add panner cubes in to this marination. and leave it for half an hour. Ingredients : To Make Falafel Bread : 1 cup chickpeas(chole - soak overnight) 1 chopped onion(medium size) 2 chopped garlic cloves Some finely chopped fresh green chillies Salt as per taste Crushed black pepper 1 tsp roasted cumin seeds(jeera) powder Some coriander powder 1/2 cup gram flour(besan) 1/2 tsp baking soda 1 tbs oil(any cooking oil) 2 tbs water To Make Hummus : 1 cup boiled chickpeas with some ginger 1.5 tbs Tahini paste(recipe of Tahini paste is in description) 1 finely chopped green chilli 2 chopped garlic cloves White sesame seeds (for Tahini paste) 3 tbs curd(2 tbs for Tahini paste) Some chilli flakes 1/2 lemon juice 4 tbs water used for boiling chickpeas 1 tbs olive oil (or 1/2 tsp sesame oil) Salt For Toppings : Hummus Chopped cherry tomatoes Chopped black olives Some fresh coriander/mint leaves Cream cheese Chopped boiled beetroot Chopped colourful bell peppers Some sesame seeds(til) Some chilli flakes Some roasted cumin seeds(jeera) powder Salt(to sprinkle) You can order above ingredients and get it delivered at your doorstep through below link : 🤍 Also checck my channel on : 🤍 Method :- To Make Falafel Bread : Take a chopper/mixer jar, add 1 cup chickpeas(chole - soak overnight) Add 1 chopped onion(medium size) Add 2 chopped garlic cloves Add some finely chopped fresh green chillies Add salt as per taste Add some crushed black pepper Add 1 tsp roasted cumin seeds(jeera) powder Add some coriander powder and grind the mixture coarsely. Then add a small bowl of fresh coriander, again grind it to the rugged texture and transfer the mixture in a mixing bowl. Further to make bread, add 1/2 cup gram flour(besan) in the bowl(can be replaced with maida) Add 1/2 tsp baking soda Add 1 tbs oil(any cooking oil) Add 2 tbs water, mix it well and rest the mixture for 10-15 mins Pre heat oven for 10 mins at 190⁰ Further take a flat baking tray, and place a baking paper on it greased with oil. Transfer the mixture in it and flatten it making a thick layer(thickness of the bread should be like a thick paratha) Keep the tray in oven for 25 mins. To cook on stove, take a plate place baking paper on it and make a small thick layer of the mixture. Heat up the pan and keep it on slow flame for 5 mins. Brush a drop of oil on pan, and place the falafal base on it keeping the baking paper side up. Remove the baking paper slowly, cover the lid and cook it on slow flame. If the water starts running on the lid the make sure you clean it to avoid making bread soggy. Cook the bread for 7-10 mins until both the sides get golden-brown colour. Turn of the stove and keep the bread on cooling rack for 5-10 mins. Now take out the tray from oven, sides of the bread will get golden-brown colour. Flip the bread on cooling rack and remove baking paper from it. Take the bread on chopping board, and cut it into small pieces. (This bread can be stored in the refrigerator for 6-7 days and for 2 days in room temperature and also can warm in a toaster whenever you want) To Make Hummus : 1 cup boiled chickpeas with some ginger 1.5 tbs Tahini paste (Recipe - Dry roast white sesame seeds, add 2 tbs curd/olive oil churn them in mixie and you will get a nice paste, it will be close to taste of Tahini paste) add 1 finely chopped green chilli and 2 cloves garlic finely chopped add 1 tbs curd Some chilli flakes 1/2 lemon juice 4 tbs water used for boiling chickpeas add 1 tbs olive oil (or 1/2 tsp sesame oil) add salt Churn it in mixie and Hummus is ready For Toppings : Put some hummus on some bread slices Add some chopped cherry tomatoes, black olives, cucumber slices, some fresh coriander/mint leaves on it. Put some cream cheese on other bread slices Add some chopped boiled beetroot, colourful bell peppers Add some sesame seeds on all breads Add some chilli flakes on all breads Add some roasted cumin seeds(jeera) powder on all breads (You can add toppings as per your choice) Sprinkle some salt on the top of all Falafel breads So here's your Nutritious, Super Healthy Falafel Flat Bread ready!!! Malai Kofta Recipe मलाई कोफ़्ता रेस्टौरंट जैसा | North Indian Curry Recipes | Chef Meghna Malai Kofta with a healthy little tangy twist of cranberries stuffing, no fry and no cream. Means triple dose of going guilt free eating of our favorite Punjabi sabjee in new avatar. Check more videos of US Cranberries- 🤍 My amazon store link- 🤍 Ingredients : Some chopped cranberries Some finely chopped cashews Some finely chopped coriander Salt as per taste Red chilli powder(as per taste) 2 medium size boiled and mashed potatoes 100 gm paneer A pinch of turmeric powder 2 tbs bread crumbs/corn flour 3-4 chopped garlic cloves Some finely chopped green chillies(as per taste) 4 medium size chopped tomatoes 8-10 cashews/1.5 tbs chopped cashews 1 tsp cumin seeds(jeera) powder 2-3 cloves 2-3 small cinnamon(dalchini) sticks 2 cardamom 1/2 tsp turmeric powder 1 tsp coriander powder 1 tsp garam masala(optional) 1 tbs curd(dahi) 1/2 tsp sugar Some kasuri methi(for nice flavour) Oil(for frying koftas, 1 tbs to make paste & 1 tsp for gravy) You can order above ingredients and get it delivered at your doorstep through below link : 🤍 Also checck my channel on : 🤍 Method :- To Make Kofta : Take a small mixing bowl, add some finely chopped cranberries Add finely chopped cashews Add some finely chopped coriander Add salt as per taste Add red chilli powder as per taste(or fresh chopped green chillies) and mix it well. Further take a big mixing bowl, add 2 medium size boiled and mashed potatoes (do not overcook) Add 100 gm paneer Add red chilli powder as per taste(or fresh chopped green chillies) Add a pinch of turmeric powder Add salt as per taste Add 2 tbs bread crumbs/corn flour and mix it well. Roll out a ball from this mixture, make a small dent in the center, add 1/2 spoon stuffing in it and roll the kofta covering up the sides. (Apply some oil in hands if the mixture is sticky and make more koftas with the same procedure) Further heat up the appam pan, pour some oil in each cavity. Add all koftas in each cavity, and cook both the sides until it gets golden-brown colour. To Make Gravy : Heat up another pan, pour 1 tbs oil in it, add chopped onions and roast it well. Add 3-4 chopped garlic cloves Add some finely chopped green chillies(as per taste) Add a small piece of finely chopped ginger Add salt as per taste Add 4 medium size chopped tomatoes Add 8-10 cashews/1.5 tbs chopped cashews then cover the lid and cook it until tomatoes become mushy. Then turn off the stove and rest it to bring it to the room temperature, grind it in a mixer jar and make a thick paste. Heat up the same pan, add 1 tsp oil in it Add 1 tsp cumin seeds(jeera) powder Add 2-3 cloves Add 2-3 small cinnamon(dalchini) sticks Add 2 cardamom 1/2 tsp turmeric powder 1 tsp coriander powder 1 tsp red chilli powder 1 tsp garam masala(optional) and add some water to avoid burning. Now add paste in the pan with the help of strainer. Mix it well and add some water(if the gravy is thick) Add 1 tbs curd(dahi) Add 1/2 tsp sugar(to balance sourness) and mix it well. Add some kasuri methi(for nice flavour) Take gravy in a serving bowl, add koftas in it and garnish with some chopped cranberries. Also add some drops of curd and finely chopped coriander. Love M #ChefMeghna #AndaBhurji #EggBhurjee Ingredients: 3 eggs 2 Tomatoes finely chopped 1 big Onion finely chopped Coriander leaves chopped 2 Green chillies finely chopped Oil Salt per taste 1 tsp spoon Ginger- Garlic paste 1/2 tsp Turmeric Powder (Haldi) Method: Heat up a pan Add 2 spoon oil Once the oil starts getting hot, add finely chopped onion Add salt per taste Once the onion starts getting cooked, add ginger-garlic paste 1 tsp Now add green chillies Time to add 1/2 tsp Turmeric powder (Haldi powder) Let it cook for some time now time to add tomatoes We want well-cooked tomatoes, so close the lid of the pan and let it cook for 5 minutes Once you see tomatoes get mushy, it's time to add eggs When you add eggs, start stirring the mix else you will not get the bhurjee texture Once bhurjee texture comes to your liking, switch off the gas Add Coriander leaves into bhurjee Plate it and eat with bread or pav or roti You may garnish with some coriander leaves, if you like. Best to have warm but you could also carry in tiffin / lunch box. Grilled Chicken 00:00 - Making of grilled chicken 00:11 - Heating the grill pan 00:25 - Marinating the chicken 01:04 - Cutting the chicken 01:32 - Grilling the chicken 02:50 - Veggies in the marination 03:37 - Plating time Ingredients: 1 Chicken Breast - cut in half 3 tsp Soya Sauce 2 tsp Tomato Ketchup 1 tsp Chili Sauce 1 tsp Brown Sugar 1/2 tsp Vinegar 2 finely chopped garlic cloves Crushed black pepper Chili flakes Oil Salad made from cucumber, tomato, carrot, Method: Heat up the grill pan. Begin with preparing marination for chicken. In a bowl, take 3 tsp soya sauce add 2 tsp tomato ketchup Add 1 tsp chili sauce Add 1 tsp Brown Sugar Add 1/2 tsp Vinegar Add 2 finely chopped garlic cloves Mix it well Add crushed black bell pepper And some chili flakes Marination is ready. Dip chicken breasts in marination and leave it for 20-30 minutes. Once the chicken has been marinated well, it's time to grill it Drizzle few drops of oil n the pan Place marinated chicken breasts on the grill pan Let chicken cook till gets caramelized from both sides We should get a sticky nice glaze on both sides Keep pressing it a little from the top as we need chicken to be a little flat. Now take out the chicken from the pan and let it cool down for 5 minutes Don't cut chicken immediately else we will lose its juice. To make Corn Spinach Quesadilla you need Ingredients :- 2 chopped garlics ,1 onion chopped 1 sweet corn boiled ( half churn and half pilled ), 1 green chilly ½ cup chopped coriander, 1 cup chopped spinach 2 tbsp. mayonnaise, some cheese, 4 tortillas 4 tbsp. oil mixed herbs Method:- Heat the pan and add some oil to it. sauté onion, garlic, and chilly, adding some salt to it. Add corn to the onion and cook for some time. Add coriander and spinach and cook till it becomes soft. Add mixed herbs in to it. Let the mixture cool down. Add some mayonnaise to the mixture. Take the grill pan and brush some oil on it . Place 1 tortillas on it. Spread some stuffing on half tortilla, shred some cheese n fold it. Cook both the side. Serve with some salad.
