Popcorn Pork Over the past couple months I’ve gone through 5 pork bellies trying to figure out how to get that popcorn looking effect. I tried dry brining over multiple lengths of time, using baking powder, different oil & oven temps - all ending in frustration. I finally realized that the quality of the pork belly actually was the most important variable, which really surprised me. There is a big difference in flavor between standard pork and heritage breed pork (I think of it as the wagyu of pork), and apparently its ability to bubble up. Healthy unsaturated fatty acids in Pata Negra pigs that ate a diet of acorns reach 75% - making it the most "cardiohealthy" of all animal fats. The fat contains over 55% oleic acid (similar to olives) which is linked to lowering bad cholesterol and to the reduction in the risk of coronary heart disease. Spanish acorn-fed pigs live like kings compared to mass production pigs. While an acorn-fed Iberico black pig has a roaming space of 30000 square meters each (eating acorns, mushrooms, pasture, roots), regular mass production pigs have 0.3 to 0.75 square meters of space (not enough to stretch, turn around or to reach a state of deep sleep).

Along with serving world class German food in Thailand, one of the unique aspects of Restaurant Sühring is that the chefs are twins! Restaurant Sühring is one of the most well known high end dining restaurants in Bangkok, having received a Michelin Star and at the top of the list of Asia’s 50 Best Restaurants. I just want to make this clear - I initially wanted to eat at Sühring and asked permission to film a video. Graciously, they did not allow me to pay, though I had all intention to do so. This video is not sponsored, but I didn’t pay for the food. Thank you to Khun Pup for organizing. Ok, let’s get into this amazing meal we had, including a surprise German style fried pork leg, which happened to be at midnight (we dined for like 4 hours, and what an incredible meal it was).
